Here are some delicious cool and fruity, drinks to enjoy throughout the warm weather.
Bathers Pavilion Cranberry Cocktail
This makes one serve, but it’s easy to make a larger quantity
- 1/2 lime
- 1/2 cup cranberry juice
- 1/4 cup watermelon juice
- 1/4 cup pineapple juice
- crushed ice
Combine the well-chilled juices in a jug. Fill a serving glass with ice, and squeeze over the lime juice. Top with the juice mix mix and a sprig of mint.
Mango and Lemongrass Cordial
Ingredients
- 500g coarsely chopped mangoes, about 3 mangoes
- 375g raw caster sugar
- 2 stalks lemongrass, bruised
- 5cm piece ginger, peeled, coarsely chopped
- 1 vanilla bean, split, and seeds scraped
- 60ml lime juice, or to taste
- Sparkling Mineral Water
Combine the mango, lemongrass, sugar, ginger and vanilla beans and seeds and 1 ½ cups water in a saucepan and stir over medium heat until the sugar dissolves.
Bring to the boil and simmer for 5 – 7 minutes or until the mango is pulpy. Remove from heat and pass through a muslin-lined (or new Chux towel) sieve.
Discard solids, add lime juice and transfer to a sterile bottle. Store in the fridge.
To serve
Mix the cordial with mineral water or filtered water to taste. Add a squeeze of lime juice, and a stick of lemongrass as a stirrer.
White Sangria
Ingredients
- 750ml white wine, chilled
- 180ml fresh orange juice
- juice 1 lemon
- juice 1 large lime
- handful mint leaves
- orange, lemon and apple slices
Syrup
- 180g sugar
- 180ml water
- 1 vanilla bean, split
- 1 cinnamon stick
For the syrup
Bring all the ingredients to the boil, stirring to dissolve all the sugar.
Take off the heat immediately. Cool and refrigerate.
To serve
Place the wine, orange juice, lemon and lime juice in a serving jug and add the syrup to taste.
Serve the Sangria over plenty of ice with sliced fruits. A good splash of Soda Water can also be added for a ‘spritz’.
