Fine Apple Tart

This is the perfect dessert when time is short. All you need is a couple of apples, a sheet of puff pastry from the freezer, and some vanilla bean icecream to serve. Crisp and delicious, it’s a real winner.

Serves: 4 Cooking Time: 50 minutes

Ingredients

  • 1 x 24cm sheet Butter Puff Pastry, keep refrigerated. My preferred brand is Careme Pastry
  • 2 - 3 Green Star apples, peeled, cored, sliced
  • caster sugar
  • butter at room temperature

Instructions

Preheat oven to 190C. Also heat the baking tray in the oven.

Trim the edges off the pastry sheet. Cut the pastry in half. (You could cut out a circle if you prefer) Refrigerate while you prepare the apples.

Slice the apples on a mandolin or food processor.

Place overlapping slices of apples along the tarts until the pastry is covered.

Sprinkle generously with caster sugar and dot with plenty of butter.

Place the pastry onto the pre-heated baking paper-lined oven tray.

Bake for about 30 - 40 minutes until the sugar caramelises, the apples are golden and the pastry is crisp.

To give the tart a gorgeous glaze, brush it with some melted and sieved apricot jam.

For a really quick glaze, just melt a jar of fruit jelly in the microwave.
