Limes, when they are in season, are a delicious alternative to lemons.
Microwave Lemon Curd

- 1 1/2 cups sugar
- 1 cup lemon juice
- grated rind of 1 lemon
- 4 eggs
- 1 tbs cornflour
- 125g butter at room temperature
Instructions
Place all the ingredients except the butter in a microwave-safe bowl and mix well.
Microwave on HIGH for 5 minutes - stirring after 2, 4, and 5 minutes.
Microwave on MEDIUM HIGH for 2 minutes or until thick.
Allow to cool, and beat in the softened butter
Bottle in sterilized jars and store in the refrigerator.
