The only extra to make is a dressing.
Feel free to add goodies from the pantry, such as cashews, peanuts or rice noodles.
Ingredients for the salad
- 1 roasted chicken, skin removed, flesh shredded
- 60g bag baby rocket leaves
- 300g bag of finely shredded cold slaw mix
- few shreds red capscium or red chilli, finely sliced, optional
- handful of mint leaves
- handful coriander leaves
- peanuts or cashews, roughly chopped
- lime wedges
- salad dressing
- 1/4 cup grapeseed oil
- 2 tb fish sauce
- 2 tb lime juice
- 1 – 2 tb soy sauce
- 1 tb sweet chilli sauce
- 1 clove garlic, crushed
- 1 tsp grated ginger
Pour into a screw-top jar and shake well.
The salad is so simple to assemble
Shred the chicken and while you are opening the other bags, pour a little dressing over the chicken to moisten and allow to sit for a minute or two.
I usually put the rocket leaves in some ice water for 5 – 10 minutes to give them a boost. Drain
Now, gently mix the rocket, cold slaw, capscium, and chicken mint and coriander together.
When ready to serve, add the dressing.
Pile onto plates sprinkle with chopped nuts and a good squeeze of lime juice.
